Like any cast iron pan, these need to be maintained to function at the highest level. After use, wipe clean or wash with a scrub brush and some nice coarse salt—soap is fine, too, if necessary! Dry thoroughly before putting it away, and a light coat of oil always helps. If food begins to stick, you can always re-season it with vegetable oil. (It’s a good idea to do this regularly. Every six months is a good rule of thumb, depending on how often you use your pans.)
