Description
Our 12" Prospector pan has been a best seller for some time, and this is the same pan one inch smaller. The name comes from its shape: with two sturdy riveted handles, it looks a good deal like a prospector's gold pan. It is spun iron, made by spinning a disc of iron on a lathe and forming it over a mold. Like cast iron, it heats evenly, so it cooks and bakes evenly, and with simple routine care it should outlast you. It weighs about half as much as cast iron, though, which you will appreciate moving it from stovetop to oven to table. It comes pre-seasoned with flax oil for a natural nonstick surface, and works in gas, electric, convection, and even wood-burning ovens. Bake a quiche, a fruit pie, or a cobbler in it and carry it straight to the table, or just make your eggs and hash in it. It is made at a small foundry in Shropshire, England, where the Industrial Revolution started. Being iron, it wants to be dried and lightly oiled after washing, and the riveted handles get as hot as the pan. It measures 11" across the rim (9" at the base), 2" deep, and 13" across the handles, stands 3" from base to the top of the handles, and weighs 2 lbs.
