For one thing, the water channel circles each loaf creates a heat dome that ensures enough moisture for that perfect crispy crust. Second, the proprietary ceramic material is unglazed and can "breathe" in the oven, distributing heat evenly without the risk of burning. The process is shockingly easy and consistent. These ceramics are fully tested and food-safe and are chemically inert, meaning they will not react with any ingredients in your dough. They do not oxidize like iron or steel. There is nothing to affect the flavor of your bread but the ingredients and the heat of your oven. And the radiant heat of the ceramic pan leads to a gentler cooking process and more consistent results. Easy to use and a snap to clean. Care Details: Cleaned by hand with dishwashing liquid. After cleaning, they should dry for a few days in a well-ventilated place
