Steel gives you the rawest scrubbing power, but we’ve found that can sometimes be too much power —if you aren’t careful, a steel brush can permanently scratch or damage your grill surface. We like the safer option of brass bristles, which are tough and wiry enough to scrape off stubborn burned-on food but not aggressive enough to harm damage-prone surfaces like cast iron or even porcelain.
