Vintage Butcher Knife Set of 3
The three items in this Butcher Knife set all have steel blades and dyed black European beech wood scales. They feature broad, ergonomic handles, and three brass pins. These style knives are common in butcher shops in France.
The curve at the bolster-end of the Filet Knife keeps the 6" blade thin and flexible for fileting meat or fish away from the bone. 11" long overall. The straight blade profile of the two Sticking Knives allow for tasks like skinning and boning, but they can pull double duty as all around utility knife, and their heft make them a good fit for butchering whole chickens.
Two sizes: small is 10-1/2” overall with a 5-1/2” blade; and the large is 14” overall with an 8-1/2” blade.
